Elior, a leader in the catering sector, asked us to study a new concept of self-service in their catering establishments.
Faced with a changing market, the study sought to optimize the different spaces, and the flows and rhythms of customers.
The concept's aim was to develop a variety of spaces and different types of consumption by working on the self-service zones, the working café, and the alternative catering, all the while taking into account the functionality and the customer's comfort.
